I found this recipe for Chewy Lime and Coconut Sugar Cookies via My Baking Addiction and my goodness but they are yummy!
They're super soft and light in flavour and really easy to bake...in fact the only issue I encountered was that it was a struggle to stop myself from eating the raw dough before I got them in the oven...is it just me that does that?
